Pommes Frites

Classic French fries. Once you eat handmade chips you will never go back to tipping them out of a plastic packet again. Serve this potato dish with anything — these are rockstar chips.


800 g desirée potatoes, peeled,

cut into wedges

Oil for deep frying

Sea salt, to season


Place a large, heavy frying pan over high heat. Pour in the oil and heat

until bubbling slightly. To test if the oil is hot enough, drop in a small

cube of bread; if it sizzles then the oil is ready. Add the potato wedges

in 2 to 3 batches until golden brown and cooked through. This will take

about 5 minutes. Adding all the potato wedges at once will lower the

temperature of the oil, making the potatoes oily.

Remove the potato wedges to a plate covered with kitchen paper,

set aside and keep warm. Season to taste.
