Strawberry, Vanilla and Apple Shortcake
The perfect cake to enjoy with tea. Use green apples for a little more tartness. One slice and you will be addicted.
- 5 tbps Bitton Strawberry & Vanilla Jam
- 4 large in season apples, peeled, cored and sliced thinly
- 185g plain flour
- 1 tsp baking powder
- 100g caster sugar
- 125g unsalted butter
- 1 egg
- 1 tbsp milk
- icing sugar
- extra butter and Bitton Strawberry & Vanilla Jam to serve
Preheat oven to 180 degrees C. Place the apples and 3 tablespoons of water into a medium saucepan over a low heat and allow to soften (about 15 minutes). Add the Bitton Gourmet Strawberry & Vanilla Jam and stir until combined. Set aside and allow to cool. Cream the butter and sugar in a bowl until smooth. Add the egg and mix until well combined. Sift the flour and baking powder and fold into the butter mixture. Turn the mixture out onto a floured surface and knead until smooth. Divide in half, wrap and refrigerate for 30 minutes. Remove the dough from the fridge and roll out into two 24 cm rounds. Grease and line a 24cm round baking tin with baking paper and place one round of dough into the tin to cover the bottom. Spread with the apple and strawberry mixture. Place the other round on top and gently press down. Brush with milk and sprinkle with a little extra sugar. Bake in the preheated oven for 30 minutes or until cooked. Allow to cool in the tin. Sprinkle with icing sugar and serve with whipped cream and more of our delicious jam.
