Serves: makes about 20 complete biscuits
Preheat the oven to 160 degrees C. Line and grease a flat baking tray.
Place the butter and icing sugar into a bowl and mix with an electric mixer until soft and creamy. Sift the plain flour and cornflour into the bowl and mix well until a soft dough is formed.
Place small balls of the mixture onto the baking tray being careful that they are at least 5cm apart. Press down gently with the back of a fork until each biscuit is approximately 3cm in diameter.
Cook the biscuits for approximately 15 minutes or until cooked through. Place on a wire rack to cool and repeat until all the mixture is used.
When cool, place half teaspoonfuls of Bitton Gourmet Milk and Coconut Jam between two biscuits and press down gently. Store in an airtight container.
